
Ingredients:
* 2 pounds fresh spinach, washed and trimmed
* 2 tablespoons unsalted butter
* 2 cloves garlic, minced
* 1/4 cup all-purpose flour
* 1 cup heavy cream
* 1/2 cup grated Parmesan cheese

Directions :
* Preheat your oven to 375°F (190°C). Grease a baking dish with cooking spray or butter and set aside.
* In a large pot or Dutch oven, bring about 1 inch of water to a boil. Add the fresh spinach to the pot in batches and cook until wilted, about 1-2 minutes. Drain the spinach in a colander and let it cool slightly.
* Once the spinach is cool enough to handle, use your hands to squeeze out as much excess moisture as possible. Chop the spinach coarsely and set aside.
* In a large skillet, melt the butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
* Sprinkle the flour over the melted butter and garlic, stirring constantly to form a roux. Cook for 1-2 minutes to cook out the raw flour taste.
* Slowly pour in the heavy cream, stirring constantly to avoid lumps. Cook until the mixture thickens, about 2-3 minutes.
* Stir in the grated Parmesan cheese, nutmeg, salt, and pepper until the cheese is melted and the sauce is smooth.
* Add the chopped spinach to the skillet and stir until it is evenly coated with the creamy sauce.
* Transfer the creamy spinach mixture to the prepared baking dish and spread it out into an even layer.
* Sprinkle the shredded Gruyere or Swiss cheese over the top of the spinach mixture. If desired, sprinkle breadcrumbs evenly over the cheese for added texture.
* Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly and the top is golden brown.
* Remove the Creamed Spinach Gratin from the oven and let it cool for a few minutes before serving.
